Identification and Genetic Diversity of Amylase Producing Lactic Acid Bacteria from Brown Rice (Oryza nivara) Wakawondu Cultivar Based on 16S rRNA Gene

This study identified the genetic diversity of amylase-producing lactic acid bacteria from brown rice (Oryza nivara) Wakawondu cultivar based on 16S rRNA gene. The ten strains were isolated fermented washing water; two isolates, SBM3D and SBM4A, displayed strong amylase activity. isolates had same characteristics according to both morphological biochemical examination. effect fermentation time bacterial revealed that growth at 12 h with OD values enzyme activity, respectively, 0.856 175 mU/mL, was nearly identical 27 0.886 176 mU/mL consecutively. Meanwhile, isolate SBM4A showed a significant increase in 15 an value 0.552 activity 99 U/mL. maximum seen 18 0.657 126 mU/mL.
